Goodbye 2013, Hello 2014!




Season's Greetings!


The holiday season is in full swing, and we celebrated with a wonderful holiday party. Thank you Lisa Ranier for organizing another wonderful event! I hope you all have the chance, over the next few weeks, to enjoy some time with friends and family, to count your blessings, and to get recharged for the new year. I wish you all a blessed holiday season and hope you all find days filled with joy and love! The next General Membership Meeting is scheduled for Thursday, January 16th at 9:30am at The Card Bar  in downtown Lake Oswego.

Lake Run Details


The 38th Annual Lake Run will offer a 10K route around the lake and the 5K will meander around Lakewood Bay and along North Shore Drive and up to Iron Mountain Blvd., as in years past. The 10K will be $40, 5K is $30, and the Kids Dash is $15. All runners will receive a technical weave shirt with the Lake Run logo on the front. Tell your friends and family to register early as shirts will not be guaranteed after April 1st. Any extra shirts will be available for sale at the registration tent on the day of the race.

Please come by the packet pick up area on Friday, May 9th between 4:00 - 8:00 pm for the pre-event social on the Millennium Plaza, or volunteer to help hand out packets! Plans are in the works for food and beverages to be offered for sale on the Plaza on Friday as well as a variety of food vendors will be available during the race event on Saturday morning, May 10th.

Could you share your favorite recipe?

Spaghetti with Clams - serves 2
6 ounces spaghetti
4 Tablespoons extra virgin olive oil divided
1 garlic clove thinly sliced
¼  teaspoon crushed red pepper flakes
2 pounds Manila clams scrubbed
2 Tablespoons chopped fresh parsley

    Bring 3 quarts water to boil in a 5 quart pot. Season with salt and add pasta.  Cook until almost tender. Drain, reserving ½  cup pasta water.
    Meanwhile, heat 3 tablespoons oil in a large skillet over medium heat. Add garlic and cook, swirling pan often until just golden.  Add red pepper flakes and continue cooking 15 more seconds. Add wine, then clams; increase heat to high. Cover skillet and cook until clams open and release their juices, 3-6 minutes, depending on size of clams.  As clams open, use tongs to transfer them to a bowl.
    Add ¼  cup of the reserved pasta water to skillet; bring to a boil. Add pasta to pan. Cook over high heat, tossing constantly, until pasta is al dente and has soaked up some of the sauce from the pan. Add clams and any juices from the bowl to the pan, along with parsley and toss to combine. Add more pasta water if sauce seems dry.  Transfer pasta to warm bowls and drizzle with remaining oil.
